marjoram dumplings

3 1/2 oz. smoked bacon

1 onion

2 cloves garlic

2 lbs. potatoes

5-6 tsp. fresh

marjoram leaves, minced

1 tbsp. butter

4 egg yolks

1/3 cup cornstarch

Salt and Black Pepper

1. Cut the bacon into cubes; fry until crisp. Remove the bacon from the pan.

 

2.Peel and mince the onion and garlic. Fry them in the bacon fat until translucent.

 

3. Boil half the potatoes with their skins; peel and put through a ricer. Peel the other half of the potatoes, wash and grate finely.Then press out the potato water through a cloth. Combine the 2 sets of potatoes.

 

4.Add the marjoram and other ingredients (except the bacon) to the potatoes. Form dumplings, placing a bit of bacon in the middle of each one.Simmer for about 30 min. in plenty of salted boiling water.
