french onion soup with thyme
4-5 med. onions thinly sliced
1 Tbsp. butter
1 Tbsp. olive oil
1 tsp. sugar
3 cups beef stock
1/4 cup dry red wine
3 Tbsp. finely chopped thyme or
lemon thyme
freshly ground black pepper
4 slices toasted French bread
2 cups freshly grated cheese

Cook onions in butter and oil over med. heat for l5 min.—covered and stirred to prevent sticking.Remove 1/2 of onions and set aside.Continue cooking other half with sugar for 30 min. until a deep golden colour. Add beef stock and wine and simmer for 40 min.
Add first half onions, thyme, & season with pepper, heat through. To serve, ladle into oven proof soup bowls, top with bread and cheese and broil until cheese is brown. Serve immediately.
