Farmers Daughter Herbs

herb-omelette
1 bunch chives or green onion tops
l bunch cilantro or parsley
4 sprigs oregano
4 sprigs basil
2 sprigs savory
6 well beaten eggs

 Chop all herbs and add to eggs.  Mix.In a 10 inch fry pan heat enough oil to coat the bottom and sides. When oil is hot, pour in egg-herb mixture. Cook until bottom is done or top looks slighty dry. Slide onto a plate and turn over uncooked side into a pan. Cover with a lid or the plate until done. Can be kept warm in a glass pie pan until ready to serve. Serve warm cut into slices the same way you would cut a pie.Can also substitute dill and tarragon for basil and oregano.
