Basic Poultry mix is a combination of 4 or 5 different herbs. Usually oregano, rosemary, sage, bay leaf, and thyme (from left to right in the image). Marjoram can be exchanged for the oregano, and when in season savory is a great addition.
To use the poultry mix, first strip off the leaves from all of the stems, and chop everything (except for the bay leafs) into a fine blend (as shown in the photo).
The bay leafs can either go in the cavity of the bird or just leave them in the juices at the bottom of the pan and use for basting. The chopped herbs can be added to stuffing, or rub them on the poultry skin, and use them for basting while roasting.
*Note: Any leftover herbs can be air-dried in a bowl and used later in many recipes.
