Farmers Daughter Herbs

melon balls
1/3 cup water
1/3 cup sugar
3 tbsp. snipped Fresh Mint
1/4 cup rum
1 tbsp. lemon or mime juice
6 cups desired melon balls
(watermelon, honeydew, cantelope, or casaba)
Fresh Mint for Garnish
For sugar syrup, in a small saucepan combine the water, sugar, and mint. Bring to boiling, stirring constantly. Remove from heat and strain to remove mint. Stir in rum and lemon or lime juice. Cool syrup thoroughly.
In a large serving bowl combine the melon balls and cooled syrup. Cover and chill for 2 to 4 hours. To serve, spoon melon balls amd syrup into desert dishes or hollowed out lemon or lime halfs. Garnish with mint.
