Saltimbocca in Italian means “leap into your mouth.” Need we say more!
pounded thin .
8 slices lean ham
8 large whole leaves of sage _
freshly ground black pepper (to taste)
1/4 cup butter
2 tbsp. olive oil
5 tbsp.dry white wine
Put l slice of ham and 1 leaf of sage on each slice of veal. Season with pepper. Roll slices of veal and secure with a toothpick. Saute veal in butter and oil in a skillet for 3-4 minutes until browned. Add wine to skillet, simmer for 12 minutes, then serve. Use pan drippings as a sauce. Serve with pan-roasted potatoes.
