Makes 6 to 8 Servings

4 eggs
1 cup flour
2 tsp. Salt
1 cup dark beer
2 - 3 bunches fresh sage
2 - 3 tbsp. oilve oil

1. Seperate 2 of the eggs. Combine the 2 yolks with the remaining 2 whole eggs, flour, salt and beer, and mix into a smooth batter. Set it aside covered for about 1 hour.
2.Wash the sage, pluck the leaves from the stems and pat dry.
3.Beat the 2 egg whites until stiff and fold them into the batter. Heat the olive oil in a 10 in. cast iron skillet.
4. Dip the leaves into the batter and fry them until golden brown. Drain them on a paper towel and serve warm.
