Farmers Daughter Herbs

herbed-baked-eggs 4 thin slices ham

3 large eggs

1 tsp. prepared mustard

1/4 cup plain yogurt

2 tsp. chopped Fresh Chives

2 tsp. chopped Fresh Parsley

3/4 cup shredded  Cheddar cheese (3 oz.)

Sprigs of herbs to garnish

Hot buttered toast to serve


Line 4 greased ramekin dishes with ham. In a bowl, beat together eggs, yogurt and mustard. Mix together chives and parsley. Stir 1/2 of herb mixture and 1/4 cup cheese into egg mixture. Spoon into ramekins and top with remaining cheese and herbs. Bake in an oven preheated to 375 degrees until golden and set, about 25-30 minutes. To serve, turn out onto warm plates, garnish with sprigs of herbs and hot buttered toast.
