1 tbsp Extra Virgin Olive Oil
1 Scallion (green onion) minced
1/2 tsp Fresh Sage leaves, minced
1/4 Fresh Thyme leaves, minced
2 large eggs
Fresh ground pepper to taste
Preheat oven to 400 degrees. Pour the olive oil into a parmesan dish, swirling the dish so the oil coats the bottom and sides of the dish completely. Sprinkle the scallion, sage and thyme into the dish evenly. Crack your eggs into a small bowl and gently pour them on top of the herbs. Bake the eggs just until the yokes are set and the whites are firm. Serve immediately with a side of bacon and cornbread.
Add a slice of ham to dish before baking for an extra treat.
