This sauce is very good on pasta and it livens up plain fried chicken and everyday meatloaf. Use it as a pizza sauce, or a dipping sause for wings.
2 or more cloves garlic,
peeled and crushed
2 tbsp. olive oil
6 ripe tomatoes, peeled and chopped
(or canned stewed tomatoes)
4 tbsp. or more finely chopped Fresh Basil leaves
2 tbsp. finely chopped Fresh Oregano
freshly ground black pepper (to taste)
Saute garlic in oil in a skillet for 1 minute. Add tomatoes. Cover and simmer for 10 minutes. Add basil and oregano. Simmer for an additional 2 minutes. Serve hot or refrigerate for later use. You may want to add 2 tbsp. finely chopped Italian parsley. There are many, many versions of basic marinara, however this is a good base recipe.
