
2 boneless whole chicken breasts
skin removed, cut in half
1/3 cup ricotta cheese,
skin removed, cut in half

1 tsp. oregano leaves
1/2 tsp. thyme leaves

Pound each chicken breast between 2 sheets plastic wrap to 1/4 in. Set aside.
In small bowl, combine ricotta and Parmesan cheeses; onion, basil, oregano and thyme. Mix well; Spread 1/4 cheese mix down center of each chicken breast half. Fold in sides and roll up fastening with wooden picks. Arrange seam-side down in 9 inch square baking dish. Pour spaghetti sauce over chicken. Bake in 350 degree oven for 30 minutes. Remove picks, top with mozzarella cheese. Serve with pasta.
